Ingredients

  • 8 chicken drumsticks bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • Fresh chopped parsley for garnish, optional
  • Lemon wedges for serving, optional

Method

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and place a wire rack on top if available.
  2. Pat the drumsticks dry using paper towels. This helps the skin crisp up during baking.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, paprika, thyme, salt, and black pepper.
  4. Add the chicken drumsticks to the bowl and toss them thoroughly until each piece is evenly coated with the seasoning mixture.
  5. Arrange the drumsticks in a single layer on the prepared baking rack or sheet, making sure they are not touching.
  6. Bake for 35–45 minutes, turning the drumsticks halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges if desired.
