Ingredients
  

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 red bell pepper diced
  • ½ red onion thinly sliced
  • ½ cup black olives sliced
  • 1 cup mozzarella cubes optional
  • 1 cup grilled chicken or shrimp optional
  • cup chopped fresh parsley or basil
For the Dressing
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp honey
  • Salt and pepper to taste

Method
 

  1. Cook pasta in salted water until al dente. Drain and rinse under cold water.
  2. Prepare vegetables and chop into bite-sized pieces.
  3. Whisk together dressing ingredients in a small bowl.
  4. Combine pasta, vegetables, and protein (if using) in a large bowl.
  5. Pour dressing over the mixture and toss until evenly coated.
  6. Chill for at least 30 minutes before serving.

Notes

Adjust seasoning to taste. Store leftovers in an airtight container in the fridge for up to three days.
