Method
Cook the pasta
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining. Set pasta aside.
Cook the chicken
- While the pasta is cooking, season both sides of the chicken breasts with salt and pepper.
- In a large skillet over medium-high heat, heat the olive oil. Add the chicken and cook for 5–6 minutes per side, or until golden brown and cooked through. Remove chicken and let it rest before slicing.
Make the Boursin sauce
- In the same skillet, reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
- Add the Boursin cheese and a splash of reserved pasta water or cream. Stir gently until the cheese melts into a smooth, creamy sauce. Add more liquid if needed to adjust consistency.
Combine pasta and sauce
- Add the cooked pasta to the skillet. Toss to coat the pasta evenly with the sauce. If the sauce is too thick, add a bit more reserved pasta water.
Add chicken and garnish
- Slice the cooked chicken and place it on top of the pasta. Garnish with fresh parsley or basil. For added color and flavor, stir in cherry tomatoes or spinach before serving.
Serve and enjoy
- Serve immediately while warm and creamy. Pairs well with garlic bread or a light salad.
