Ingredients
  

  • 2 cups cooked shredded chicken rotisserie works best
  • 4 large flour tortillas 10-inch size
  • 8 oz cream cheese softened
  • 1/3 cup buffalo wing sauce adjust to spice preference
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese optional
  • 1/4 cup chopped green onions
  • Salt and black pepper to taste
  • Optional: 1/4 cup finely chopped celery for crunch

Method
 

Make the Filling:
  1. In a large mixing bowl, combine softened cream cheese and buffalo wing sauce. Mix until smooth and creamy. Add shredded chicken, cheddar cheese, green onions, and blue cheese (if using). Mix well until fully combined.
Assemble the Wraps:
  1. Lay one tortilla flat on a clean surface. Spread about 1/4 of the filling mixture evenly over the surface, all the way to the edges.
Roll the Tortilla:
  1. Roll the tortilla tightly into a log. Try not to press too hard to avoid pushing the filling out.
Repeat:
  1. Repeat the filling and rolling process with the remaining tortillas.
Chill:
  1. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour. This step helps the rolls firm up, making them easier to slice.
Slice:
  1. Unwrap and slice each roll into 1-inch pinwheels using a sharp or serrated knife. Wipe the knife between cuts for clean slices.
Serve:
  1. Arrange pinwheels on a serving platter. Serve chilled or at room temperature. Enjoy!
