Method
Season the Chicken
- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
Sear the Chicken
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5–7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
Add Mozzarella
- Reduce the heat to low. Place 1–2 slices of mozzarella cheese on top of each chicken breast. Cover the skillet with a lid and let the cheese melt, about 1–2 minutes.
Top with Tomatoes and Basil
- Once the cheese is melted, add the cherry tomato halves around and on top of the chicken. Sprinkle fresh basil leaves generously over the dish.
Drizzle with Balsamic Glaze
- Turn off the heat and drizzle balsamic glaze over the chicken and toppings just before serving.
Serve Immediately
- Plate and serve while hot. Enjoy on its own or with your favorite side dish.
