Caprese Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning or dried oregano
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella cheese sliced
  • 1 cup cherry tomatoes halved
  • Fresh basil leaves about ½ cup, loosely packed
  • 3 tablespoons balsamic glaze store-bought or homemade

Method
 

Season the Chicken
  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
Sear the Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5–7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
Add Mozzarella
  1. Reduce the heat to low. Place 1–2 slices of mozzarella cheese on top of each chicken breast. Cover the skillet with a lid and let the cheese melt, about 1–2 minutes.
Top with Tomatoes and Basil
  1. Once the cheese is melted, add the cherry tomato halves around and on top of the chicken. Sprinkle fresh basil leaves generously over the dish.
Drizzle with Balsamic Glaze
  1. Turn off the heat and drizzle balsamic glaze over the chicken and toppings just before serving.
Serve Immediately
  1. Plate and serve while hot. Enjoy on its own or with your favorite side dish.
