Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 slices fresh mozzarella cheese
  • 2 ripe tomatoes sliced
  • Fresh basil leaves a small handful
  • 2 tablespoons balsamic glaze store-bought or homemade

Method
 

Season the chicken:
  1. Pat the chicken breasts dry. Season both sides with salt, pepper, and Italian seasoning.
Cook the chicken:
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6–8 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F / 75°C).
Add mozzarella and tomatoes:
  1. Lower the heat. Place 2 slices of mozzarella cheese on each chicken breast. Top with tomato slices. Cover the skillet with a lid and let the cheese melt slightly, about 1–2 minutes.
Garnish and serve:
  1. Remove the chicken from the skillet and place on serving plates. Top with fresh basil leaves and drizzle with balsamic glaze. Serve immediately.
